Title: NOT THE ROCK BAND

OK.............ONE THING I ALWAYS ENJOY ON THAT SIDE OF THE ATLANTIC- APART FROM FISHING AND MINISTER'S DAUGHTERS-IS MEAT LOAF, I CANT RESIST IT IF ITS SLIGHTLY SPICY
ANY RECIPES OUT THERE?WITH AS LITTLE FAT AS POSSIBLE/IE. AS HEALTHY AS POSSIBLE

Well, this one is pretty basic......but you can add some garlic, worchestershire, peppers, hot sauce or whatever if you want to spice it up!

1 pound LEAN ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats

Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard

Preheat oven to 375 degrees F.

Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.

Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.

NOTE:  When I take it out of the oven, I use two spatulas and lift the meatloaf, slide a metal cake cooling rack under it and on top of the pan sides and let any fat drain away back into the pan and let the meatloaf sit a few minutes.
