Haggis was originally a survival food anyway. When all the meat is consumed, you use whatever is left over in order to make a few more meals. So I find it interesting that there are haggis "recipes", but I am not surprised that they vary. The original "haggis" would have varied too depending on what ingredients were available. For instance, here in the USA, I can't get a sheep's stomach very easily. Nor can I get sheep liver, lungs, or heart. Lately, I have not even been able to get a collagen sack to replace the sheep stomach. I have had to use calf liver & lamb shoulder in a 2 to 1 ration for the meat ingredients and create a stomach effect out of a metal bowl wrapped in tin foil. There your go- Scots' ingenuity all over it. And it's cheap too! :-\
